Hi. This is my blog to share low-fat vegan recipes that are both delicious and simple to prepare. Having read Dr. Joel Fuhrman’s life changing book, Eat to Live, I’ve been striving to eat with a strong focus on nutrient-density. I’m not 100% vegan but am definitely evolving in that direction. These are the recipes I’ve found or created in my search to develop a library of flavorful recipes that make the choice to be vegan an easy one for any meal.
