Thanks for stopping by. Here’s the history of me/LRR… I’ve been a vegetarian since 1993 but two recent books led me to a shift towards veganism/nutritional density. In 2009, I read Dr. Joel Fuhrman’s Eat to Live. I lost a stubborn spare-tire over the course of several months following the program in his book (when nothing previously had budged it) and although there are ups and downs (depending on how closely I follow ETL), have kept it off for over a year. I feel great and, weight aside, his nutritional density focus just makes sense for long term health. I also read Jonathan Safran Foer’s Eating Animals, which again, reinforced my questioning of eggs and dairy. Full disclosure: I’m not yet 100% vegan but am almost there (and even typing these words has me asking myself “why not now??”) and to that end I’ve been searching the internet, recipe books, grocery stores, and trying to invent recipes that are vegan, very easy and fit the ETL program. This blog is my findings. I admit, there are splurge-worthy moments here (obviously, chocolate is my weakness), but for the most part, these are my findings that make the choice to be vegan and healthy an easy and delicious one for any meal.
